COLD DAY CHILI

1 lb. ground beef or ground turkey
1 onion, finely chopped
1 green pepper, finely chopped
1 T. jalapeno, finely chopped
1 can whole kernel corn, drained
2 cans Mexican style tomatoes, like Rotel (undrained)
2 (8 oz.) cans tomato sauce
2 T. chili powder
2 T. cumin
1 t. salt
1/2 t. ground red pepper (cayenne)
1/2 t. paprika
1 can kidney beans, drained, rinsed
1 can black beans, drained, rinsed
1 cup water
Cook ground meat with onions and peppers; drain excess grease.
Add corn, tomatoes, jalapeno, sauce, seasonings and water and bring to a boil.
Add beans. Cover and simmer for 2 hours.
Serve with toppings and some corn muffins! Enjoy!!
Toppings:
Sour cream
Shredded cheese of your choice
Green onion, if desired
Makes 6-8 servings.
SPAGHETTI PIE CASSEROLE

This makes two 9x13 casseroles - you can half the recipe for a family of 4-6.
1 (16 oz.) pkg. spaghetti, cooked
2 eggs, slightly beaten
1/2 cup Parmesan cheese
2 lbs. ground beef
1 small onion, chopped
2 garlic cloves, minced (or garlic salt)
2 jars spaghetti sauce
1/2 t. salt
1/4 t. pepper
8 oz. reduced fat cream cheese
2 cups (8 oz.) reduced-fat sour cream
3-5 green onions, chopped (optional)
Cook spaghetti according to package directions; drain. (Always save some of the pasta water for using in any recipe--in case the dish seems dry. You can add a spoonful or so, if needed.)
Mix beaten eggs and Parmesan cheese with spaghetti.
Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat for 6-8 minutes, or until the beef is no longer pink, breaking up the beef into crumbles; drain.
Stir in the spaghetti sauce, salt and pepper - bring to a boil. Reduce heat; simmer, uncovered for 20 minutes, stirring occasionally.
In a small bowl mix cream cheese and sour cream until blended - stir in green onions.
In two greased 9x13 baking dishes, layer the spaghetti, cream cheese mixture and meat mixture.
Bake, covered, at 350 degrees for 25 minutes.
Uncover - bake 5-10 minutes longer, or until cheese is bubbly.
BERRY WARM UP
From Judi Troyer (Lipton ad back in the 70s)
3 T. Lipton Instant Tea powder
1/3 cup pure lemon juice
1/2 cup orange juice
1/2 cup sugar
1/4 t. ground cinnamon
1/4 t. ground nutmeg
4 cups water
2 cups cranberry juice cocktail
In large saucepan, combine all ingredients; heat through.

Serve in cups or mugs and garnish, if desired, with lemon or orange slices.
Six servings.
Tip: You may want to start with less sugar and add more later after tasting. I find that recipes usually have too much sugar for what we are used to and prefer.
