MOM'S COLE SLAW



MOM'S COLE SLAW

Grate cabbage to make 3 cups.

Sprinkle with 3T. sugar, then 2 T. vinegar.

Stir well. Taste to see if proportions are right.

If it tastes like too much vinegar, add a little more sugar to taste.

If the taste is right, add 1/2 cup mayonnaise and stir again.  Serve immediately.

Tip from Mom:  I notice that the taste is not as good if I used pre-grated cabbage from a bag at the grocery. 

I think it tastes better with the natural juices from freshly-grated cabbage.

LOW CARB ZUCCHINI CASSEROLE


 

LOW CARB ZUCCHINI CASSEROLE*

2 medium zucchini, quartered and chopped (about 4 cups)

2 T. butter, cut into small pieces

3 large eggs

1/4 cup heavy cream

1/4 cup chopped onion

1/2 t. salt

1/2 t. pepper

1  1/2 cups shredded cheddar, divided

1/4 cup grated Parmesan cheese

1/4 cup finely crushed pork rinds or parmesan crisps


Preheat oven to 350. Grease a 9-inch round or 8-inch square baking dish.

Bring a large pot of lightly salted water to boil.

Add the zucchini and cook until just tender, about 4 minutes.

Drain well in a colander.

Spread the zucchini in the dish and dot with pieces of butter.

In a large bowl, whisk together the eggs and cream. 

Stir in onions, salt, pepper and half the cheddar cheese.

Pour mixture over zucchini.

Sprinkle top with the remaining cheddar, the parmesan and the pork rinds.

Bake 35 minutes until bubbly and nicely browned.

Sprinkle with chopped basil, if desired.

SAVORY ROASTED SWEET POTATOES



SAVORY ROASTED SWEET POTATOES

2 large sweet potatoes

1 T. olive oil

1 t. paprika

1 t. thyme

1/2 t. parsley

1/4 t. salt or seasoned salt

Note: I usually season by feel so you can add more or less as you like. I also add a little garlic powder. 

Preheat oven to 450. 

Spray baking sheet with non-stick cooking spray (or just use foil on pan).

Dice sweet potatoes into bite-sized pieces. 

Add potatoes to mixing bowl and toss with oil until coated. 

Add in seasonings and toss again.

Place potatoes on baking sheet and bake 30-35 minutes or until tender. Note: I flip mine half way through baking.


CINNAMON BREAD


CINNAMON BREAD

Yields 2 loaves

2 cups warm water

1 T. yeast

1/4 cup sugar

2 t. salt

1/4 cup avocado oil

5 cups flour

1/2 cup powdered sugar

1 T. cinnamon


Place warm water in mixing bowl.

Sprinkle sugar and yeast over water and let stand 5 minutes.

Add flour, oil and salt.

Knead 2-5 minutes.

Let rise until doubled in size (about 1 hour).

Divide dough in half.

Roll each half out to about 9 x 15 (or wide as your bread pan x 15).

Sprinkle generously with powdered sugar and cinnamon.

Roll up tightly, place in greased pans seam side down. Note:  I usually put a little square of parchment in the bottom of the pan, also.

Let rise until nearly doubled in size (30-40 minutes).

Bake at 350 for 30 minutes or until golden.

Turn onto cooling rack for about 30 minutes before slicing.

SKILLET SPANISH RICE

1/4 cup pure vegetable oil

1 medium onion, sliced

1/2 medium green pepper, chopped

1/2 lb. ground beef

1 cup regular rice, uncooked

2 (8 oz.) cans tomato sauce

1  3/4 cups hot water

1 t. prepared mustard

1 t. salt

dash pepper

Heat oil in skillet. Add onion, green pepper, beef and rice.  Stir over high heat until lightly browned.

Add tomato sauce and other ingredients.  Mix well,

Bring quickly to a boil. Cover tightly and simmer 25 minutes.

Makes 4 servings.

1/2 cup grated cheese may be added just before serving.

Note: If using packaged, pre-cooked rice, use only 1  1/2 cups water for 1 1/2 cups rice and simmer uncovered, only 5 minutes.

This is one of those recipes that tastes better the next day!

FRENCH BREAD AND AVOCADO TOAST

FRENCH BREAD

1.15 cup warm water (1 cup plus 2 T. and 1 t.  warm water)

1 T. sugar

1/2 T. active dry yeast

1 T. avocado oil

2 and 1/2 or 3 cups flour

Combine water, sugar and yeast. Let sit for 3-5 minutes. 

Add salt, oil and 2 cups flour gradually.

Knead for 3-5 minutes.

Add additional 1/4 cup flour at a time until dough doesn't leave a lot of residue on hands.

Allow dough to rise for about an hour.

Flatten dough then roll long-ways, pressing out air bubbles and seams.

Pinch each end to seal the loaf.

Arrange seam side down on parchment-lined baking sheet.

Gash top of loaf 3-4 times.

Cover with pastry towel and let rise for about an hour. 

Preheat oven to 375 degrees and use rack in center of oven.

TIP FOR CRISPIER CRUST: 

Place baking sheet in the oven and immediately throw 2-3 ice cubes on the bottom of the oven. Close the door quickly.

Bake 25-35 minutes until golden.

Optional: slather loaf in butter!

AVOCADO TOAST

Slice loaf long-ways and drizzle with avocado oil.

Place back in the still hot oven for 5-10 minutes.

Mash 1-2 avocados and season with salt and pepper.

Spread avocado on toasted loaf.

Sprinkle with additional salt and pepper, to taste.

We also add red pepper flakes on top.

DEVILED EGGS

DEVILED EGGS "PICNIC EGGS"

6 boiled eggs

salt to taste 

1/2 t. dry mustard

1/4 t. pepper

3 T. mayo

Cut peeled eggs lengthwise into halves. 


Remove yolks from boiled eggs and put them in a small mixing bowl. Use a fork to mash the yolks. 

Add to the yolks - salt, mustard, pepper and mayo and blend together. Add more mayo to get the consistency desired (or Betty Crocker says half n half, or vinegar or salad dressing are other options).

Mix to the consistency desired and fill whites with the yolk mixture. 

Chill a couple of hours and serve.

MAC N CHEESE



MAC N CHEESE

4 T. butter, cut in pieces
1/2 cup sour cream
2 cups cheddar cheese, grated
3 eggs, beaten
4 cups cooked elbow macaroni, drained
1/2 t. salt
1 cup milk

Preheat oven to 350 degrees.

Place cooked macaroni in a large bowl while still hot and mix in the cheddar.

In a separate bowl, combine the remaining ingredients - then combine with the macaroni-cheese mixture.

Pour all into a casserole dish and bake for 30-45 minutes.  

Top with additional cheese, if desired.


COLESLAW

1 pkg. coleslaw cabbage
1 bottle coleslaw dressing
1 can pineapple, drained if needed
1 can mandarin oranges, drained

Mix all together and chill.

PINEAPPLE CHEESE SALAD

1 #2 can pineapple
3 T. flour
1 cup pineapple juice
1/2 lb. longhorn cheese
3 T. sugar
3 eggs, separated
1/2 t. salt
1/2 lb. marshmallows

Mix flour, sugar and salt. 

Add 1 cup pineapple juice. Boil; reduce heat and stir constantly til thickened.

Add 3 beaten egg yolks.

Fold in whipped egg whites.  Let cool.

Add other ingredients in bite-sized pieces. Nuts of your choice are optional.

Ada's note:  Our Myers' family loves this recipe.

BLACK BEAN SALSA


BLACK BEAN SALSA

1 can black beans, drained and rinsed
1 can black-eyed peas, drained and rinsed
2 cups corn, cooked, cooled
1/2 red pepper, finely chopped
1/2 bunch green onions, finely chopped
1/2 bunch cilantro, finely chopped

Combine above ingredients.

Dressing:

1/2 cup balsamic vinegar
1/4 cup olive oil
1 T. sugar

Mix together.

Toss dressing with bean and veggie mix.

Refrigerate.

Serve with blue corn chips or regular tortilla chips.

POTATOES, TOMATOES, AND GREEN BEANS

Boil a small bag of small new potatoes (I like the yellow ones), cut into quarters, for about 12 minutes in salted water.

While potatoes are boiling, in a large skillet melt 3 large blobs (I'm big on exact measurements) of butter.

While butter is melting, chop half of a medium sized onion into small pieces.

Saute the onion pieces in the butter on medium heat until almost starting to brown.

Add the potatoes and saute for another 6 minutes.

Add exactly 2 large handfuls of frozen green beans, broken into reasonable-sized pieces.

Saute with added beans another 4 minutes, then add enough grape tomato halves to balance the green-ness of the green beans.

Saute about one minute more, sprinkle lightly with garlic salt, then serve.

BEST CORN CASSEROLE THREE RECIPES FROM MOM




SCALLOPED CORN

1 cup whole kernel corn, drained              
1 cup cream corn                                        
1 8 oz. sour cream                                         
1 box Jiffy corn muffin mix, dry
1 chopped green pepper
2 eggs, beaten
1 stick butter, melted and cooled
1 chopped onion


Mix all ingredients together.  Bake @ 350  for 40 - 60  minutes in a   1 1/2  qt. greased casserole.


Second recipe, a little different from the first:

SCALLOPED CORN

1  1-lb. can creamed style corn
1 cup milk
1 well-beaten egg
1 cup cracker crumbs
1/4 cup minced onion
3 T. chopped pimento
3/4 t. salt
1/2 cup buttered cracker crumbs

Heat corn and milk. Gradually stir in egg.  Add next four ingredients and a dash of pepper.

Pour into greased baking dish. Sprinkle with buttered crumbs and bake at 350 for 20 minutes.

MOM'S CORN CASSEROLE*

 2 eggs
 1 (16 oz.) can whole kernel corn (do not drain)
 2 (16 oz.) cans cream corn
 1 stick butter, melted
 1 cup sour cream
 1 (8 1/2 oz.) pkg. corn muffin mix

Beat eggs in a large bowl, then add all other ingredients.  Bake in a well
greased  9x13" pan for 1 hour at 350 degrees.

*not from her mom, just the title of the casserole

STUFFING



STUFFING

2 1/2 cups Swanson Chicken broth
generous dash black pepper
2 stalks celery, coarsely chopped
1 large onion, coarsely chopped
1 pkg. (16 oz.) Pepperidge Farm stuffing, Herb seasoned

Heat broth, black pepper, celery, onion in a 3-quart saucepan over med. high heat to a boil.  Reduce heat to low.  Cover and cook for five minutes, or until vegetables are tender.  Add stuffing and mix lightly.

Spoon the mixture into a 3 qt greased casserole dish.  Cover and bake for 20 minutes @ 350 degrees or until hot. 

(I cut this one from the newspaper this year)

CORN FRITTERS



CORN FRITTERS

1  1/2 cups flour
2 t. baking powder
1/2 t. salt
1/2 t. dry mustard
1 egg
2/3 cup milk
1  1/2 cups whole kernel corn
1 T. melted fat

Sift flour, measure and sift again with dry ingredients.

Beat egg and combine with milk and drained corn; add dry ingredients and mix well.

Drop from teaspoon into hot deep fat (about 360 F.) and fry until a golden brown (4-5 minutes).

Drain on unglazed paper.

Serve at once with syrup or jelly, if desired.

SPANISH RICE PRONTO 1958

1/4 cup bacon drippings
1 medium onion, thinly sliced
1/2 medium green pepper
1  1/3 cups Minute Rice
1  3/4 cups hot water
2 cans tomato sauce (8 oz. cans)
1 t. salt
dash pepper
1 t. prepared mustard (optional)

Melt bacon drippings in skillet or saucepan. Add onion, green pepper and Minute Rice (right from the package).   Cook and stir over high heat until lightly browned.  

Add hot water, tomato sauce and seasonings.  Mix well.

Bring quickly to a boil.  Cover tightly and simmer 10 minutes.  

A fiesta for 4.


Addition in 1963 - she made it with 2 cups rice and 2 cups hot water. She changed the optional mustard amount to 1/2 teaspoon.

BLUEBERRY MUFFINS

BLUEBERRY MUFFINS

1 egg
3/4 cup milk
1/2 cup corn oil
2 cups flour
1/3 cup sugar
3 teaspoons baking powder
1 t. salt
3/4 c. frozen blueberries

Heat oven to 400 degrees. Put muffin papers in muffin pans. 

Beat egg; stir in milk and oil. Stir in remaining ingredients all at once until flour is moistened (batter will be lumpy).

Gently fold in blueberries.

Fill muffin cups about 3/4 full. (For holiday baking and to make things a little more special, I usually top half the muffins with sugar just before baking. It makes a nice sugary crust on the muffin after baking. Some of my family doesn't like this, so I only sugar half of them on top.)

Bake until golden brown, about 20 minutes at 400.  Let cool 5 minutes and then immediately remove from pan to a wire rack to cool.
