FEBRUARY 14 SALAD
or APPLESAUCE SALAD
From Billie Reid
2 pkgs. cherry jello
1 (No. 2) can applesauce
6 oz. red hots
Add red hots to 3 cups boiling water. When red hots are dissolved, add jello pkgs. and stir until jello is completely dissolved.
Add applesauce.
Chill until set.

CRANBERRY WALDORF SALAD
From Pearl Holmes, Grandma (from the Badcock Calendar, November 11, 1989)
1 1/4 cup boiling water
1 3-oz. pkg. raspberry jello
1 cup canned whole cranberry sauce
1/2 cup cored, unpeeled chopped apple
1/2 cup chopped walnuts or pecans
1/2 cup mayonnaise
1/2 cup celery
Combine boiling water and jello. Stir until dissolved.
Chill until slightly thickened.
Fold in remaining ingredients.
Pour into a four-cup mold or 8-inch square dish. Chill until firm.

GELATIN CHEESE SALAD 1960
GELATIN CHEESE SALAD

1 pkg. lemon jello
1 cup hot water
Cool until it just begins to set. Whip.
Then add:
1 cup whipped cream
1 pkg. cottage cheese
Put lemon layer on bottom.
1 pkg. lime jello
1 cup hot water
1 cup pineapple juice
When thickened, add:
1/3 cup stuffed olives
1/3 cup nut meats
1 cup crushed pineapple.
Pour on top of lemon layer.
Place in refrigerator.
Serve on lettuce.

PARTY BISQUE JELLO

1 3-oz. pkg. jello
1 can evaporated milk, chilled
1 cup sugar
1 1/4 cup water
juice of 1 lemon, grated rind
Slightly gel all except milk.
Beat milk.
Fold into jello and place in graham cracker-lined dish.
Serves 4-8.

GELATIN CHEESE SALAD

1 pkg. lemon jello
1 cup hot water
Cool until it just begins to set. Whip.

FROZEN WALDORF SALAD 1963
FROZEN WALDORF SALAD

2 eggs, slightly beaten
1/2 cup sugar
1/2 cup pineapple juice
1/4 cup lemon juice (1 lemon)
1/8 t. salt
1/2 cup diced celery
1/2 cup drained, crushed pineapple
2 medium apples, diced
1/2 cup broken English walnuts
1 cup cream, whipped
Combine eggs, sugar, pineapple juice, lemon juice and salt.
Cook over low heat until thick, stirring constantly. Cool.
Add celery, crushed pineapple, diced apples, English walnuts.
Gently fold in whipped cream. Spoon into an 8" pan and freeze.
To serve - cut into squares and serve on lettuce.
Makes 12 servings.

ORANGE SALAD
ORANGE SALAD

1 No. 2 can crushed pineapple (drained)
1 can mandarin oranges
1 3-oz. pkg orange jello
1 12-oz. cottage cheese
1 large cool whip
1 cup nuts, chopped
Mix dry jello with cool whip, cottage cheese, pineapple, oranges and nuts.
Put in pyrex. Let gel.

1 large box strawberry jello
2 cups boiling water
10 oz. frozen strawberries
small can crushed pineapple
2 sliced bananas
Pour half mixture into dish. Set in refrigerator until firm.
Top with 4 oz. sour cream.
Then add the other half of the jello mixture. Chill until firm.

CRANBERRY SALAD

(simplified version)
1 can whole cranberry sauce
2 3-oz. packages jello (black cherry, raspberry, or as desired)
2 1/2 cups water
1 apple, chopped
2/3 cup walnuts, chopped
1/2 cup grapes, chopped (optional)
Boil water, pour over jello in large bowl. Stir 2 minutes until completely dissolved.
Stir in cranberry sauce, walnuts, chopped apples and grapes.
Chill until set.

1 lb. cranberries, cooked and drained
2 oranges, chopped
2 apples, finely chopped
2 cups sugar
1 large box red jello
1 small box red jello
Celery, to taste
Walnuts, to taste
Dissolve jello in about 3 cups of water.
Add all ingredients.
Mix well. Chill until firm.
Lyn's Note: I don't add all 2 cups of sugar - maybe more like a cup or less of sugar.

2-3 packages strawberry jello
1 2/3 cup hot water
Mix and dissolve.
Add:
1 pkg. frozen strawberries
1 20-oz. can crushed pineapple, drained
2 mashed bananas
Pour half the mixture into a mold and let jell.
Spread sour cream over jello. Then add the rest of the jello mixture. Chill.

STRAWBERRY NUT SALAD

1 large package strawberry jello
1 cup boiling water
1 cup pecans, chopped
5 medium bananas, mashed
2 10-oz. pkgs. frozen strawberries, thawed
1 20-oz. can crushed pineapple, drained
1 pint sour cream
Dissolve jello in boiling water. Add all other ingredients, except sour cream.
Turn half the mixture into a bowl and refrigerate until firm (about 1 hour).
Spread layer of sour cream and add remaining strawberry mixture. Refrigerate.
When firm, add the rest of the sour cream.

STRAWBERRY NUT SALAD

1 large pkg. strawberry jello
1 cup boiling water
1 cup pecans, chopped
5 medium bananas, mashed
2 10-oz. pkgs. frozen strawberries, thawed
1 large 20-oz. can crushed pineapple, drained
1 pint sour cream
Dissolve jello in boiling water.
Add all other ingredients, except the sour cream.
Turn half of the mixture into a bowl and refrigerate until firm, about 1 hour.
Spread layer of half of the sour cream and add rest of strawberry mixture.
Refrigerate and when firm add the rest of the sour cream.
