1 to 1 1/2 lbs. of ground beef
2 cups cheddar cheese, grated
12 tortillas any kind…corn or flour cut in squares
1 large can (28 oz.) Las
Palmas green enchilada sauce
1 can black beans
Optional: sliced
olives, 1 can corn
Brown ground beef with garlic powder, onion, cumin, salt and
pepper, and oregano to taste; drain.
Add black beans, corn and
olives.
Spray 9x13 pan with Pam.
Place half the tortillas on baking sheet, spread.
Place half the tortillas on baking sheet, spread.
Place half the meat on top, spread. Sprinkle with cheese. Repeat layers.
Pour entire can of sauce on
top. Bake at 350 for 30 minutes.
