Today's recipe, Ground Pork Parmesan is from John's cousin, Kim, pictured above. Yumm--delicious winter comfort food!!
GROUND PORK PARMESAN

1 can Italian peeled tomatoes-
chopped
1 t. oregano
1/2 t. pepper
1 lb. ground veal (I use pork)
2 eggs beaten
3/4 c. Italian bread crumbs
2 T. oil
6 thin slices mozzarella
6 thin slices ham
grated Parmesan
In saucepan, warm tomatoes and
oregano. Simmer till it thickens some.
Form meat into patties, dip in egg and roll in
bread crumbs.
Brown in oil in skillet till browned on each side.
Place patties in flat casserole
dish. Spoon tomatoes over meat then add the ham and mozzarella.
Top with more sauce. Sprinkle with Parmesan. Bake at 350 or until bubbly and juicy.
