CHUNKY POTATO SOUP



CHUNKY POTATO SOUP      7 Servings

4 medium potatoes
3/4 c. chopped onion
1 small carrot, chopped
 1/4 c. chopped celery
1 1/2 c. chicken broth
 3 T. butter, cubed
 3 T. all-purpose flour
 2 1/2 c. milk
 1 T. minced fresh parsley
 3/4 t. salt
 1/2 t. pepper
 1 c. shredded swiss cheese


In large saucepan, combine potatoes, onion, carrot, celery, and broth. 


Bring to boil. 

Cover and simmer 12-15 min. or until vegetables are tender. 

Lightly mash.

Meanwhile...in small saucepan, melt butter, stir in flour until smooth. Gradually stir in milk. Bring to a boil. Cook/stir  2 min. or until thickened. 


Stir into potato mixture. Cook/stir until thickened/bubbly. Add parsley, salt, pepper. 

Remove from heat. 

Stir in cheese until melted.
